Disgusting. But is it any surprise given that the industry's bottom line has continuously been held as infinitely more important than public health? This is what happens when there's next to zero federal regulatory control and, instead, an ingenious system that allows these companies to regulate themselves.

Making the most of 'me root veggies

I'm loaded up with all sorts of root veggies and squashes, courtesy of Boston Organics. While I'm looking forward to summer and, with it, the bounty of rich leafy green veggies that I'll be getting, I'm doing my best not to waste any of the produce that I'm currently getting.
Last night I made a simple potato bake: chopped white potatoes, yams, carrots, squash and a yellow onion - tossed together with some olive oil and sea salt and baked. Delicious.
And this morning I mashed up the remainder and made these yummy potato pancakes. So filling and delicious on this windy, rainy and cold morning.

The MOST inspiring vegan video
I just stumbled upon this video and unfortunately am unable to embed it. It's beautifully done and lays out the environmental, ethical and human health benefits of veganism in a very moving and non-preachy way.
I'd encourage everyone to watch it; particularly my friends (like Ron!) who are transitioning to vegetarianism out of concern for animals, the natural world and themselves! Link.

Chocolate peanut butter cups!

I can't even believe how delicious these homemade chocolate peanut butter cups are! The recipe is straight out of Alicia Silverstone's The Kind Diet: super easy and unbelievably sweet!
I think I'll be making these along with batches of vegan cookies this year to give to friends during the Holidays. Try 'em and I guarantee you'll love 'em.
